Cucumber stir-fry with eggs is a home-style recipe, and taste absolutely fabulous.
Ingredients and Preparation for 4
Prepare -
- 2 large Cucumber - remove skins, thinly sliced
- 7 garlic cloves - sliced
- 3 red chili
- 2 large eggs
Cooking Steps
Begin, by saute garlic and chili in 5 tbs cooking oil in a medium wok/skillet in medium heat.
Add cucumber slices and continue stirring.
Cover with top, and leave to simmer for 5 minutes over medium heat.
For flavor, add:-
- 2 tbs chicken stock
- 1/2 tsp salt
- 1/2 tsp black pepper
Keep stirring.
Add 2 eggs, and stir gently.
Ready for serving.

ReplyDeleteShould fry the eggs first. Add the cucumbers near the end so the dish doesnt come out soggy. Youre stewing the eggs in cucumber juice instead of stirfrying.
